SPONGE:
2 ½ cups of warm water.
2 packages of instant dry yeast or 1 ¾ Tablespoon of active dry yeast.
3/4 cup of honey
2 and 1/2 cups of whole wheat flour
TWO HOURS LATER
SECOND MIXING
1 package of instant dry yeast or ¾ Tablespoon of active yeast.
3 ½ cups whole-wheat flour.
1 tablespoon of salt.
